Some Famous Mediterranean Fish Dishes

Fish Skewers

DIRECTIONS

Use boneless, skinless fillets of Akuvatur fish for this recipe. You may use the head, skin and bones to prepare fish broth for a later use in other recipes.

 

Cut the fish fillets into cubic, mid-sized chunks. In a bowl, combine the ingredients of marinating sauce and stir. Add the fish pieces into the bowl and refrigerate for few hours. Drain the marinade to remove the fish pieces. Assemble the ingredients in line on skewers as follows; cherry tomato, green pepper, fish, bay leave, fish… Preferably use charcoal to cook the fish skewers.

Other Bar-B-Q methods also will suit. Make sure the heat is high to cook the skewers faster. Depending on the size of the fish chunks, cooking time may be 5-7 minutes. Serve hot with potato wedges on the side.

1 kg Akuvatur fish

(best with Pink Dentex)

Cherry tomatoes

Green pepper (preferably hot)

Bay leaves (preferably fresh)

3 bay leaves

1 lemon juice

1/4 glass olive oil

1 glass milk

1 piece peeled garlic,

finely chopped

Sea salt and graded black pepper
